Chilled fruit soup.... it's something I like to have in my fridge all summer long. Something simple that can be whipped up with whatever fruit happens to be in season at the time along with a few other ingredients.
We planted a peach tree in the back of our pizzeria years ago. It's like our fourth child. My husband cares and tends it all year long just waiting for the peach harvest that comes each August. It's positively loaded with ripe and juicy peaches right now. And even after handing out boxes upon boxes to relatives and friends, after the peach pies, peach cobblers and peach crisps have been baked, after the peaches have been cleaned and sliced and frozen to use later in the year, we are still left with lots more than we can eat.
This morning, I made strawberry soup(with the homegrown strawberries I have in the freezer from earlier in the summer) along with peach soup. I've wanted to share this recipe with you last year and never got around to it....
Simple Chilled Fruit Soup
-4 pints of summer fruit{{I've used cantaloupe, nectarines, peaches and strawberries in the past.}}
-1cup sugar
-3/4 cup sour cream
-3/4 cup plain yogurt{{use full fat if you prefer a creamier soup}}
1 pint half & half
Puree fruit/ berries in a blender with sugar.
Whisk together sour cream and yogurt in bowl.
Add half & half to yogurt and sour cream mixture.
Add pureed fruit. Stir until combined.
Chill before serving.
Top with homemade whipped cream if desired.
Boun appetito!!
